NESTOR EVARISTO, more popularly known as Aboy in Bacolod City, is the owner of the well known Aboy’s Restaurant that is patronized by ordinary people as well as well known personalities that include powerful politicians and business tycoons.

He has one advocacy and that is the use of locally grown raw materials in his gustatory offerings. When he sees a certain farm product that is nutritious but is not being used as often as it should be, he would concoct a recipe that will make use of that farm produce. For instance, he knows that oyster mushroom is nutritious and delicious. However, he also notices that it is not often served in restaurants and in the home.

He is concerned because if the product is not being bought, the farmers will not continue producing the same. And that is why he has come up with his own delicious concoction of the oyster mushroom wrapped in banana leaves. He had us taste his oyster mushroom dish during our trip to Bacolod with Ric Reyes of East-West Seed Company, a long-time customer of Aboy’s. Honestly, it tastes great.
