The purple pechay is a small variety. It can add color to the green salad.

MOST likely you have not seen a purple pechay. I saw it for the first time at the open house of Allied Botanical in Tayug, Pangasinan. What is it used for? It is a small variety and can be used as green salad ingredient. It will add color to the mix, according to Weng Bienes. It could also be used in the usual preparation of the green pechay. Being colored, it is assumed to contain healthful anthocyanin.
